Superior Speckled Park Cattle Co. is a partnership between The Dell Farm and New Canaan Farm to bring high quality beef to Northwestern Ontario. This is a family affair, with four adults and six children working together to raise and foster this beef breed in our area.  The adults work through out the summer breeding, calving, and doctoring our herd while the children show the cattle in 4H competitions.  Durning the winters the cattle spend the cold months sheltered in small wintering pens at The Dell farm with an all you can eat buffet of home grown grass and alfalfa hay harvested from our own fields.  For the summer months the herd moves up to Holland Hill where they summer on New Canaan's summer pastures overlooking the city of Thunder Bay and the sleeping giant. 

Speckled Park Cattle were developed in Alberta and Saskatchewan over a 50 year period to create a distinct purebred type we see today.  They are known for producing well marbled meat with minimal fat cover. They grow thick, long winter coats allowing them to graze and feed in colder environments efficiently. With their unique coat patterns they are a beautiful addition to any herd.  With weights of roughly 550kgs to 900kgs they are a mid sized cattle type, that are easy calfers and produce high milk flow for their offspring.  Canadian meat butchers have been consistently impressed with the high quality of speckled park meat since the creation of this breed.

Quarter Cow

$6.25 a pound
Approximately $780-$950

A mix of front and hind cuts. Approximately hanging weight is 125-150 pounds (all weights and prices are approximate, we do not know the actual weight until they are processed). This amount of our exceptional grass-fed grain finished beef will feed a couple or small family for about one year.  When you order a quarter beef we try to match your order with someone who has similar cutting preferences.  This way you will receive a mix of cuts from the front and hind end.  If you are creative and organized you can fit a quarter beef in a typical fridge freezer, but it is best to have a chest freezer.  A quarter beef will consist of approximately two liquor store boxes of meat.

Half a Cow

$6.00 a pound

Approximately $1500-$1800

Approximate hanging weight of 250-300 pounds.  This amount of tasty grass fed, grain finished beef will feed a family of four or larger (who eat beef a few times a week) for approximately one year. A side of beef is just how it sounds, you get half of the cow.  You will receive a mix of cuts from the front and hind ends including several kinds of steaks, ground and stewing beef, roasts and if you choose, less common cuts such as short-ribs and shanks.  you can also request extras such as soup bones and liver.  A side of beef will take up approximately half a typical chest freezer, or about four liquor boxes.

Whole Cow

$5.75 a pound
Approximately $2875-$3450

You get the entire cow!  Approximate hanging weight of 500-600 pounds this will feed a large family for a year or more, or you can have a lot of friends over for BBQ's throughout the summer!  You will get all the cuts, and can be as picky and choosy as to how you want them done as it is all entirely yours.  You can determine how much you want made into ground, and what you want for types, thickness and amounts of cuts for roasts and steaks.  Giving away beef packages to friends and family makes for fantastic gifts and having a whole cow allows you to do so easily.  A whole cow will take up an entire chest freezer, or about 8 liquor store boxes.
